On this particular Sunday my friend Carrie invited me to go to one of her lady friends. I have met Mel (Melinda Bergman) informally a few times and she just has a way of bringing warmth into an environment. She brings with her a deep breath and a nice pace that I could really get used to. She also has a really easy elegance about her. The simple meal she shared with myself and Carrie (Carrie Marill) was yummy from the beginning to it’s organic whip cream ending.
Below I have shared small corners in her home that visually inspired me. As well as her fantastic recipe for her vegan cake. I should also mention she is a wonderful artist AND apparently I am not the only one inspired by her way of life. Here her home is featured on Apartment Therapy .
SAND CAKE A VEGAN DELIGHT
Preheat oven 350 F / bake for 30-40 minutes Line 8x8pan in parchment oil & flour INGREDIENTS
70 grams almond flour
70 grams buckwheat flour
30 grams arrowroot or cornstarch
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
optional 1/4 tsp ground nutmeg
100 grams coconut oil, melted (about 1/2 cup)
200 grams almond butter, room temperature (or 3/4 cup)
185 grams honey (3/4 cup maybe a little less)
1 tsp vanilla extract
1 Combining the dry ingredients: Whisk together the almond flour, buckwheat flour, arrowroot flour, baking soda, baking powder, salt, and nutmeg. (For best results, aerate ingredients together with a whisk, a food processor or stand mixer.) Set aside.
2 Combining the wet ingredients: Stir together the melted coconut oil, almond butter, honey, and vanilla. Add the vanilla extract, and then the egg, mixing well.
3 Finishing the batter: Slowly, add the dry ingredients to the wet ingredients. When all traces of flour have disappeared into the batter you are done.
4 Baking the cake: Bake the cake until the edges start to pull away from the pan and the center is springy to the touch, 30 to 40 minutes. The edges may grow dark, since baked goods made with honey darken more easily. Don’t worry. Your cake will still taste good.
